For 12 months, focused in our job, we are in the olive grove cultivating our olives and we almost “talk” to them satisfying every need of them so that to reward us at the end of the year with their wet gold. Our production is strictly familial and does not exceed 5000 - 7000 liters depending on the year. A modest production but careful to it last drop!
However, after the harvest we definitely have a strict protocol that we follow strictly like the grinding of the olives within 8 hours, very low melting temperature, stainless tanks and the storage temperature strictly from 15ºC to 17ºC. For us olive oil was and is not just a high-value food, but something more. … This is God’s and nature gift to us on earth!
